Soup is one of the major part of our meal. it can be made with a single or numerous ingredients. it can be pureed, thin or thick broth etc. The main character of any soup is it must be appetising.
This is a perfect & healthy soup recipe as a whole meal can be used for a quick lunch or a light meal for dinner. It is suitable for vegetarians and vegans. Easy to make anytime with your choices of veggies. Vegetables can be used as per seasonal availability.
Macaroni & Vegetables Broth recipe
Equipment
- 1 soup pan
- 1 ladle
- 1 peppermill
- 1 Soup bowls
- 1 Chef Knife
- 1 vegetable peeler
Ingredients
- 1 pc carrot
- 100 grams french beans
- 100 grams broccoli
- 20 grams Nutrela soya chunks
- .5 pc Onion
- 2 cloves garlic
- 1 pinch freshly grounded black pepper
- 100 grams spinach or any green leaves
- 100 grams Macaroni
- 50 grams green peas
- 20 grams ginger
- .5 pc Zucchini
- 5 grams salt
Instructions
- Take 4 cups water in a soup pan/ pot, place over slow heat.
- Add roughly chopped onion, garlic, ginger and salt to make the soup base.
- Roughly dice all the vegetables and keep them separate.
- Add Macaroni pasta to the base and cook it for 2-3 minutes.
- Keep on adding vegetables starts with hard ones. side by side give a quick blix to soya chunks to mince it down and add it to soup base. (adding soya chunks is totally optional).
- Cook it for another 3-4 minutes on slow heat and finally add the chopped greens.
- Season well with salt & freshly grounded pepper and serve hot.
